If you have not taken a drive up the canyons here in Utah you are in for a treat!!
If you hit the canyons at just the right time the leaves look florescent. The best time to see the leaves here are the last week of September. When the leafs down in the valley are still green, the mountains have dropping temperatures so you will be able to see the beauty. If you wait until the leaves are beautiful colors here in the valley you are too late.
I have found a wonderful resource if you want to know which route to take. Utah.com has provided a very through list.

Fantastic snow, comfy accommodations. We enjoyed the spa and fireplace so much – perfect after a long day of skiing.- The Thompson Family - North Carolina
